I have one series 7 graphite, but it weights a lot for slepping, so im going to buy one 41mm aluminium for sleep tracking.

The question is, apart from de blood oxigen and the temperature there is any other difference betwen the se (2º generation heart rate) and the series 8 (3º generetion heart rate)??
 
I mean, there are some differences like ECG or Alway-on display, but if it’s a watch solely for sleep tracking use, these features won’t be useful to you anyway

Nope, as far as sleep tracking is concerned. Apple Watch only checks Heart Rate, Respiratory Rate (Blood Oxygen), and Wrist Temperature during the night.
