Not sure what to do here all morning it is just switching on and off. I don’t know if the 3.1.1 update that bricked other watches are making this become even worse than on the old verison. Not sure if I should just take it to currys where I bought it and see if they can replace it. Very frustrating.

It shouldn't do that. I had my first crash today when I was running. Never happened with 3.0-3.1. I have 3.1.1 installed now. But this was my first crash during couple of months.

Have you tried restarting both devices? Failing that, try an un-pair and re-pair.

Just don a unpair and started from a backup and so far it's going ok. only been 10 mins but better than what happened all day,

Agreed. It's actually the first thing Apple recommends when experiencing battery or lag issues.
