Since getting my Series 3 on Saturday, have been blown away by the speed compared to my S0, so put together a little video comparing the two - thought it might be useful for some people still on the fence.
Both watches had been unpaired and restored from the same backup, and were both paired to the same iPhone (7 Plus) which was in the same position relative to the watch in both tests. It's not super scientific, but hope it gives a rough idea.
FWIW, if you are on the fence and are clinging on to your 2015 Apple Watch, I'd highly recommend a Series 3 if you can afford it.
