I apologize if this has been discussed before but if it has please let me know. Is there any reason why most if not all of the stainless steel Apple Watch Series 5 models on Apple's website are not available to purchase? Will they be back in stock some time in the future or is Apple planning to release something new? I searched in google about this but couldn't find anything recent or relevant.

I would hold off buying a  Watch - They are due to be updated shortly. New ones are likely to be announced in early to mid September.

Certain ceramic models have been unavailable now in a few countries for a bit too.

I agree with others: wait if you can. The S6 will be announced in a few weeks and then you will have the choice between the newer model or a discounted S5 as resellers like Amazon and Best Buy clear out old stock. Keep in mind that the S5 uses the same chip as the S4, which is 2 years old now. The S6 will likely be a nice upgrade in several areas.

It’s the same reason every single year at this time. Apple reduces stock from suppliers when they start to prepare for the keynote announcement for the Series 6 in September. It’s usually about five weeks they slow production down for the previous Apple Watch model. The same applies to Apple Watch bands and other accessories as well, in favor of the arrival of new products.
