So I seem to be having problems with Apple Music on my Apple Watch after upgrading to WatchOS 5. Basically, my music will not sync overnight to my Apple Watch when its plugged in. I plugged the watch in last night during bedtime and all the for you and heavy rotation playlists all have cloud icons in the corner. So when I tried listening to music on my Apple Watch without any internet connection, it initially played the first few songs then it stopped playing the next after that. What even happened? It used to download songs overnight when plugged in before the update.

Chances are the Apple Watch uses Bluetooth (which is insanely slow) to sync music from your iPhone, which is somehow downloaded to your iPhone. My pure guess.
But Apple watch music sync is usually slow. My fastest record of syncing the music to Apple Watch (8GB btw) is 2 hours. I am not even using Apple Music.
 
Your music must be on your iPhone and not on iCloud. Next you need Bluetooth enabled on your watch and your iPhone. Finally, your watch must be in plugged into power aka "Charging" it will take quite a bit of time to since once they are connected via Bluetooth. Think overnight or even longer to get a good number of music copied to your Watch.
