I was going to add AppleCare to my iPhone XS Max tonight, as I had understood Apple had changed their policy to allow it to be added up to one year after purchase. However, I attempted to purchase it tonight, and all signs are pointing to it being 60 days. When did this change back?

Over a year ago. It’s 60 days, even says it when you go onto the website.
