My MBP is a year old in 2 days. If I order an applecare pack I'm not going to get it till next week due to the weekend. Does that mean I can't register it as the Mac will be over a year old? am I too late?
 
Do it in-store and have the Apple employee activate it for you then and there. Alternatively, purchase over the phone and get the rep to activate it with you on the phone.

that's what I did & they activated it right away

That's what I did. In that instance, even if the Applecare does not show up immediately on their system, you have proof of purchase in the receipt.

Exactly, although in my case it did take a few days to be activated, and the store staff had to fax a till receipt to confirm my purchase.
