...to utilize AppleCare to full advantage? Should I have the battery replaced or the trackpad? Want to keep the laptop for atleast another 3 years so any insight would be appreciated. :D

You can't simply have things replaced under AppleCare, unless they're defective. It's a warranty, not a ticket for a free "makeover" for your Mac.
 
Well yeah if it keeps the notebook from performing the way it should then yes. I doubt they will replace the battery tho.
Batteries are only covered for manufacturing defects. As they are consumable items, they deplete from use and are replaced at the user's expense. Read the BATTERIES ARE NOT COVERED section of the following link for details.
