When purchasing an iPhone the buyer has up to 60 days in which to purchase Applecare+ (if not purchased at the same time as the handset).
So, if the buyer purchases the Applecare+ at day 50, for instance, does the cover start from the date the Applecare+ plan was purchased, or is it backdated to when the actual handset was purchased?

Starts on date of purchase. I waited until I had like a week to buy on my iPhone 12, have 2 years of coverage from that date.

Date of purchase of the iPhone or of the Applecare+ policy?

as far as I can remember, the contract runs from the date of purchase of AppleCare. So if the iPhone was purchased on October 27, but AppleCare was purchased on November 15, the contract runs from November 15. (At least I think so).

In which case its best to purchase Applecare+ towards the end of the 2 month period?
I've always purchased alongside the actual handset in the past (then have to call them to change the Applecare date to when the handset was actually delivered to me)....

the last time I purchased applecare, I signed up after about 30 days via iPhone settings.
It was super easy, and you can still think about whether you want to purchase applecare.

From my experience, I purchased AppleCare + within the 60 days. At first it will appear 2 years from the date you purchased the AppleCare + but eventually it will re-adjust itself to 2 years from the date you purchased the phone. That's what I noticed on the 11 Pro Max.

Well that is crap! So if you purchase AppleCare with the pre-order, you are essentially paying for days that you don't have the phone. Stupidly I purchased the phone and AppleCare on Sept 17th, so my end date of AppleCare is Sept 18th 2023. They need to fix this policy, because you do not get the full two years of support.

Read the AppleCare proof of coverage email for the device. It states: ”Your AppleCare+ coverage is now active, and your Coverage End Date will automatically adjust to two years from the date you first activate your iPhone.”
