I'm relatively new to the world of Apple watches, so bear with me here.

I got a Series 6 and an SE 1 off eBay. Brand new, unboxed, veteran sellers with great track records, the works.

The Series 6 isn't eligible for AppleCare+ coverage, but the SE 1 is eligible.

Both models debuted at the same time in 2020, but the Series 6 was discontinued in 2021 and the SE 1 in 2022. What gives?
 
AppleCare+ eligibility is based on the "Original" sale date. When you're buying on eBay, that is by its very nature a resale. It doesn't matter if it's "unused" or "Sealed in the original box" or whatever - the date it's first sold, starts the clock ticking on AC+ eligibility. Depending on where you are in the world, the timeframe ranges from 60 days to 1 year from that date.
 
In 2020 I activated AC + on a brand new series 4 bought on amazon. And I had a replacement for red exlamation mark bug with it.

It’s based on the activation date. If someone bought an AW, opened it, never activated it, then sold it to someone else who activated it for the first time, that activation date is when the warranty would start and subsequently eligibility for AC+.

If your watch was sold guaranteed as new you should contact Apple to correct the sales date, when it is updated I think you can start AC+. I bought AirPods for which a different purchase date resulted. I contacted my own country assistance, they passed me to a second level commercial assistance and I could update purchase date, afterwards I started AC+. Of course you shouldn’t wait longer than 60 days from your actual purchase and be able to provide original documentation. I bought it from a reseller with both online and real shops, not on Ebay but that should not make the difference.

That's not always true with retailers that directly report selling dates of their merch. Any retailer that can sell you an Apple Product with AC+ pre-enrolled will report all serial numbers sold to Apple. Even if not activated, Apple knows when it was sold originally and I do not think eBay counts as an official retailer. So the Series 6 might have been reported and the SE 1 not.
