I have the choice to purchase Applecare+ yearly or a 3 years purchase, for my M2 Ultra. My question is, can I get a 3 years Applecare+ and after that period, add the yearly Applecare+? Or do I have to get the yearly Applecare+, in order to renew it indefinitely? Or there is a limit of 3 years max I can get Applecare+?
 
My understanding is that after the 3 years (or, near/before the end of the 3 years), you can start yearly. That said, I'm not close to the 3 years yet on my m1 studio, so I can't confirm first-hand.

I think this is right. My iPad Pro (that had the longer AppleCare on it) popped a notification a few days ago offering to let me renew it.
 
Is this something new on recent devices? On my iPhone 12 Pro, it asked me for a monthly AppleCare+ after the 3 years passed.
 
It's the first time I've seen it, but I often trade stuff in before that three years would be up. I do think there was a time period where it was technically available, but they didn't do anything to let you know it was time to buy it.
 
In my case, I got an alert two months ago on my iPhone 12 Pro asking me if I want to extend the AppleCare+. When I selected the option, it offered me only the monthly payment.
