When I was reading some of threads about modifying Macs, a question came up. If I was to do something to my emac, like overclock it, it would void the warranty correct? So the question is what would happen with my applecare would it just go away? Would they give me my money back?

No. If you couldn't return it to its original condition, the warranty would be voided, and you'd've lost your money. No refunds.

Edit: You void the warranty as soon as you overclock - but, if you can remove any sign of that, Apple might honor the warranty anyway.

Why would you expect any company that sold you an extended warranty to cover something you modified? They sold you a warranty for a product, not one which you modified it.
