Settings > General > Software Update. You can disable it by tapping on Automatic Updates.

I was more so wondering if when the update is about to happen will it show it to us on the updates screen like an Ios download? Ill be freaked out if my phone just starts restarting out of nowhereSettings > General > Software Update. You can disable it by tapping on Automatic Updates.

Maybe someone who participated in the beta can answer this if there was a rapid response during that time. But generally it sounds like maybe you'd prefer to keep it disabled and just check if there are updates.
