macOS Applescript: Script to Auto Check Folder for Unused files?

I was hoping to create an applescript that would check a folder on a scheduled basis for files in said folder that have not been used in a predetermined time frame and alert me to them.

I am not sure if this is an option, though I am always amazed at what people can do with Applescript so any advice would be great.

Also I was wondering if anyone could point me in a good direction to sites that they believe are valuable sources for applescript info.
