I’m having a couple of issues with iOS 15 and HomePod/AppleTV that I hope someone can help with.

1- Prior to iOS 15 I used to be able to swipe down on the AppleTV remote, when watching something, to see and select different audio sources (such as HomePod). After updating to iOS 15 swiping down doesn’t give any options to change audio sources. Is that normal?

2- I do see the option to select different audio sources from the side panel that pulls up when I hold the TV button on the Apple TV remote. If I do that and select HomePod though the AppleTV remote won’t change volume on HomePod. Is this normal?

Don´t do that. Instead, choose the Homepod as the default audio output of the Apple TV 4K (follow this instructions). Its the optimal solution in terms of performance, stability and sound quality.
 
I saw that. Thank you. I don’t want HomePod as default. I have an Amp/speaker set up in the family room where the TV is. Sometimes I want to extend or switch the sound into the kitchen where the HomePods are (overlooks the TV family room). In iOS 14 I used to do that as described in my OP. Under iOS 15 that seems broken.
The process to select HomePods is more cumbersome and the appletv remote no longer controls volume on the HomePods.

Ahhh. Got you. Yeah, unfortunately tvOS 15 seems very buggy.
