Is it possible to have an Apple Watch connected via cellular (far away from iPhone) while the iPhone itself is connected via WiFi (cellular turned off), is that achievable/possible? Would that work out?

is your watch wifi only?
Then no.

If your watch has LTE, yes. That's the whole point of LTE apple watch.

the answer is yes. but its "qualified" yes.

for what you can and can not do, while your iPhone is not with you, but still connected to only Wifi at home (for example), the best net article i have read is the one linked to below.
its specifically for apple watch series 3, but from a practical standpoint it will answer all yr actual usability questions.
