I'm attempting to launch Fantastical when clicking on the default IOS Calendar App.

Back in IOS6 I there was an app called OpenOther which allowed me to to this, but unfortunately, looks like app is no longer supported.

Is there a way of hacking plists files that would allow me to launch Fantastical when from the Mobile Calendar app?

Sorry to resurrect, but I just found it today (even though it's been out for a few months) - an update to OpenOther, which I also used under iOS6. I've tried it out and it works great.
 
OpenOther works fine under iOS7, been using it on 5S/7.0.6 since it was last updated.

I had looked for an update back when I first jailbroke iOS7, but at that time there was only the original version which did not work on my iP5. I didn't look for an update again until yesterday.
 
you can use activator as well

goto everywhere, selct top corner more
select what additional action you want, i have double tap calendar
and then go to homescreen section in activator you can select the just created action and assign it to fantatasical

Nope, not using it on 7.1.2 so I can't give any experience on 7.1.2 (since Apple added the "list" feature back into the iPhone Calendar app, I rarely need to use Fantastical)

Just saw an app called "Reroute" anyone used it, looks like it will work for what I was looking for. Down side is that it will not work on a 64-Bit device, not an issue right now but when I upgrade to the 6...
