Just looking for a piece of software that I can use to record video from USB or Firewire webcams and specify the settings, like resolution, and so on.

Application to record from a webcam with custom settings?

Have you tried Macam? It'll let you do those settings prior to recording, but not on the fly. Works with just about any webcam I've ever tried.
