So since I have been so unfortunate to not be able to get a 3GS yet and test myself, with its 256MB of RAM do the apps crash a lot less, or hopefully not at all, on the 3GS or is it the same as the 3G?

I have had a couple crashes with safari but i never really had that many crashes with the 3G either

So far, I'm seeing a lot less crashing. Safari doesn't have to reload dormant pages as much either.
 
What about for big games like The Sims or Need for Speed or apps of that nature?

If by crash you mean "fail to deal cleanly with low-memory situations", then you can certainly expect that, for a while at least, this is less likely to be seen on the 3GS.
 
I have noticed that Safari and the Twitter app I use, Tweetdeck, crash may more running 3.0 on my 3G phone.
