I noticed that not all Apple apps are listed in the launchpad. For example, the Chess game and the stickies app aren't on my launchpad, while they're clearly in the proper Apps folder. Why is that?

And is there a way to remove some apps from the launchpad? Removing the apps that have an "x" when the option key is pressed also erase them from the SSD volume! I don't want to trash the apps. I would like to customize the launchpad by having a personal selected set. I guess it's not possible.
 
Those should be in the "Others" folder.
You can hide things you don't use in a folder, just drag them into an existing one, or onto another app you can put in a folder.

Another approach is to move the unused apps to a second (or third etc.) page.
