So it seems that I've downloaded 100 or so free apps and am about to start buying them.

Unfortunately, for every good app, there are 10 copy cat apps that try and sell the same for more.

I want to stream video over 3G and wifi so I've heard that Air Video is the way to go. Then I heard that Plex is better. There are many more too.

How do I know which app to purchase??? Also, does anyone have a list of apps that you use everyday? Thanks.

I play guitar, and I love Guitar Toolkit, and Tab Toolkit.

Ultimate Tabs isn't bad either, and has it's uses.

I paid for all of them, and would do it again in a heartbeat.
 
$2 for AirMouse turns your iPhone into the magic mouse and the magic trackpad, as well as a gyro controlled pointing device!
 
It's such a subjective question. It really depends upon how you use your phone.
For me, several photo apps are used all the time. Tilt shift Generator, Color Splash and Photo Utility among them.
Always use Weather Bug. Love Paperless for notes and to do's. Print n share is great for printing to a wifi enabled printer.
Star Walk is cool and fun to use.
Can't live wo Dictionary because my spelling is awful these days!
And I use Motion X GPS Drive for directions. VERY useful!
Plenty more for fun- ESPN has several apps worthy of use if you are a sports fan and I really like Public Radio if you enjoy some of the shows on, well, public radio!
Drync Wine if you are a wine drinker...
LA Times and World News (BBC) both are good, though the LA Times one is a great app even though the paper itself sucks.
Beejive is good if you are into that.
There are more, but that should give you a few to think about.
 
If you use Google Voice to save on minutes by using the fab five thing, GV Mobile+ is excellent. I prefer it over GV Connect because it has it's own favorites screen.

If you like tabbed browsing, Atomic Web is also very useful. It also features an ad blocker that could save you on data usage if you have a limited plan and browse a lot.

I personally feel that VegSumurai is much better than fruit ninja and its free.
+1 on Angry birds just make sure you always restore from backup if you get pretty far in the game.

To the OP's question, Plex all the way. I've been using their Mac software for years and was delighted to reward them with an app purchase. It works great for control and streaming as long as you disable bluetooth. Hopefully they'll fix that in an upcoming release.

I only have one must-own app.

Plants Vs. Zombies. NOW. SERIOUSLY.
