Can someone shed some light on this. I'm using an iPhone 6 Plus on 8.1.2 and haven't manually updated any of my apps in about 5 days. Why then do my apps show updated as recently as today:

As I mentioned, Background App Refresh is off:

You have auto app updates toggled in your Settings/iTunes & App Store. It is nothing to do with background app refresh.
 
Are you referring to the "Automatic Downloads" setting? If so, I understood that to control only whether or not you wanted apps purchased on other devices automatically downloaded.

Settings > iTunes and App Store > Updates = if this is turned on, your apps on that specific iOS device will automatically update. Turn it off and they will stop automatically updating. Hope this helps.
