Hello, I was curious. Would I be able to run an app, say a game, on my iPhone, and be able to listen to podcasts/receive phone calls on my apple watch without disturbing the game running on my phone? Thank you.

Generally, Yes, if you connect the headphones directly to your watch you’ll be able to.

However, with phone calls you might need to bring the game back to foreground to start playing it again because when you receive a call it actually connects to the phone before handing over to the watch.
