Yeah, I know this is a really noob'ish question. :p Anyway, I've been downloading TV show episodes in HD from iTunes and got to wondering if my 2011 iMac even shows content in true HD. I don't know much about display resolutions, but does the iMac actually show content in 720 or 1080p when you watch an HD video? If not, then can I presume that Airplay streaming via Apple TV on my HDTV shows the content in HD?

The 21.5" iMacs have a display resolution of 1920x1080, which is exactly 1080p HD (that's where the 1080 part of 1080p comes from).

The 27" iMacs have a display resolution of 2560x1440, which is significantly higher than 1080p HD.

So yes, on either model, if you have a 1080p video file, they will play it at full quality.

The 21.5 inch model is full HD (1920x1080, so it shows your 1080p content at full resolution) and the 27 inch model is above full HD (2560x1440).
