Just curious, are all 2012 i7 Mac mini's quad core? Specifically, a Mac mini Server (Late 2012) 2.6 GHz Intel Core i7.

Yes, all i7 Mac mini (Late 2012) models are equipped with 4-core "Ivy Bridge" processors, the i5 has 2 cores:

As you have already learned, the answer is "yes". My 2012 quad i7 2.6ghz mini is dedicated to audio and video editing and it still meets my needs, so no rush to upgrade. These are very nice machines, although the HD4000 graphics are showing their age. The base 2018 mini has the same geekbench rating.
