Are all beta updates OTA then when the public build is released you have to connect it to an iMac or macbook?

Are all beta updates OTA?

No one but Apple knows for sure. All the beta updates for iOS 6 and 7 were done OTA, so it should be pretty safe to assume that it will be the same for iOS 8.
