I know that I should do a back-up when I update my iOS software, but I want to be sure if my contacts, music, apps won't be deleted. Can someone say something about this?
 
Like you said, you should backup just to be safe... but no, a normal iOS update will not delete any of your data.

Regular backups are good. And I had no issues with contacts, music, apps, etc with updates.
