Everything I’ve read seem to be that they best function as standalone speakers for music consumption.
When connected to a Mac, there’s a distinct lag when using with video editing apps.

It would be a shame if it couldn’t be used properly as computer speakers. Is this lag fixable in a future OS update or is this a technical issue?

it's airplay, always had a lag, probably always will. They have prioritized sound quality and reliability over sync

on some apps, it will delay the video on the Mac to match the audio output, you can see this with quick look, in finder select a video and hit the space bar, if you skip around in the video, when using the mac's speakers it should be almost instant, when using airplay the video will hang for a moment to let the speakers buffer.
Some apps (most, if not all of them, from apple) will delay the video on your Mac to match the audio, but a lot of apps don't do this, so you'll have an audio video mismatch.

to quote apple "it JUST works". not "it works well" or "it works great"
