I know according to tech specs the iPhone 11 Pro is thicker than the XS, but in reality are the body of the phones the same thickness and that it is a fraction of a millimeter thicker simply because they are counting the small square bump as part of the thickness? I know they don't count the circular lens as part of the thickness, but the 11 Pro has two raised edges now, the square bump which is part of the body and the additional lens bump.

No, because marketing always measures the thinnest part of the body.

If the thickness included the camera, you can bet the measurements would have an asterisk and say, "8.3mm with camera."

Thanks for highlighting this! In actual fact the 11 Pro Max is slightly larger in every way vs the XS Max, I guess the same goes for the rest of the models:

No if this was true of the Pros, it would also be true of the 11 which is given as the same 8.3mm as the XR. They are likely a hair thicker to accommodate the larger batteries.
