i have an at&t data plan, and the Sprint Pro Max variant is available for pickup in the Apple Store. I plan on buying the Sprint model at full price without activation and just pop in my AT&T sim. Looking through the specs, it appears that all US Pro Max models support both CDMA and GSM, and they support the same network bands. Is this correct?

Yes. But I would check with sprint first to make sure that your plan will work. While the phone is unlocked, some carriers will lock the sim to their network for a minimum amount of days. Someone here just went through this where they bought a Verizon phone I think it was from the Apple store, but couldn’t use it on t mobile like they wanted because Verizon had it locked to their network.

Thank you for the help!

I picked up the device at the Apple Store, and I restored the new phone from my iCloud backup in the store. I popped in my At&t sim, held my breath, and it worked immediately. :)

Thank you, again.
