Walking for 30 minutes straight and the Apple Watch never picks up they I’m walking I have the 5. I dislike this I cannot run I have a health issue

It's also looking for heart rate, and rate of movement. If it doesn't automatically pick up, you can go in and specify a walking workout. That may also not count the entire time spent, though.
 
My Apple Watch used to automatically pick up the fact I was rowing, but, when I went for a walk with the express purpose of gaining "exercise points," I'd manually tell it "I'm going walking" and manually stop it.

My Watch is turned off and put away, but you have to go into the exercise (or fitness) Watch app and select your exercise, then, when you're done, swipe right, stop it, swipe left, scroll down and end it. Something like that. (Sorry, I'm not going to power the thing back up to get it exactly right. You should be able to find it, though.)

due to health issues, I can barely really get active, thanks for the responses I'll have to manually report it from now on.

Don't have to open the workout app or anything, just tell Siri "start a walk." Then when you're done swipe right to end the walk. I assume you could tell Siri to end it, but I've never tried.

I walk still requires a base threshold to count as activity. When I walk with my family, I either have to add activity like jumping jacks or my heart rate is too low. My other option has been to set “other” so it’s the time that’s counted.
 
Mine will ask me after ~10 min or so if I want to record a walk. It might be something varying with usage as I walk several miles each day and usually initiate a ‘Outdoor Walk’ on the watch. Maybe it’s AI learns? But I do know that if I just go outdoors and randomly walk the watch will usually inquire.
 
You just have to manually start/stop the exercise times. It's really quite easy.

Setup a Watch face that has the Workouts app as a complication so there is no need to hunt it down. Or put it in the Dock.

I've got an Automation set-up on my phone to flip from my usual watch face to a "workout" watch face I have with Workouts there an hour before I work out. Tap, tap. And when the workout ends, Automation to set the watch face back to my usual face. Bonus when starting/stopping manually, can have Do Not Disturb turn on/off at same time (not sure if that can happen with auto-detect: maybe?).
