I believe the original install disks are only usable with the machine they were bought with as they are matched.
Does this also apply to the Apple wireless keyboards and accompanying cordless mouse - or will any wireless keyboard and mouse work on any iMac ?
 
They'll all work - you might have to pair them with the new machine first though.

I have access to several iMacs and 3 different wireless keyboards and magic mice - can I interchange them on different machines, or do they become paired after I have used one set with a specific iMac ?
Can I then re-pair them to different machines ?
I'm assuming that Apple keyboards purchased in different countries are set-up in the style of that country's conventions - i.e. 'American keyboards/British keyboards/Spanish keyboards'..
I say that as I'm English living in Spain.

Yes, you can pair/unpair/re-pair any Apple bluetooth keyboard or mouse or trackpad with any of your Macs. They are not "tied" to any computer.
