Are you able to mix and match the Apple Watch sports at the Apple Store ?

I want to get the sports model, with the black band but I do not want the space grey watch. I would prefer the steel colour.

Is this possible ? On the apple website it doesn't seem like you have a choice.

Lol, that's probably not going to happen. It being released in a month or them allowing you to pick out the band you want.

Motorola do it with their watches.

I don't think it will happen, but it's not impossible to imagine a build-to-order option on the Apple website, with stores only stocking certain configurations. Wouldn't be too dissimilar to customising a Mac.
