Is there a way to choose how I want my folders to be arranged across all folders? As it is now, I have to go into every single Finder folder and select "Arrange by Kind". It'd be nice if I could do this one time in one place and have it be effective for everything.

Open view options (Cmd-J in a Finder window) and customize it how you want, select the "Arrange by" type you'd prefer and click "Use as defaults". This should set the view type as defaults so you don't always need to change the settings.
