AssistantExtensions sms freeze problem JB iphone 4S 5.1.1

I have a JB Iphone 4S 5.1.1 and recently I have experienced 'freezing' when I use SIRI to send SMA
This is since installing AssistantExtensions which I find works fine otherwise.

It seems that I can only replicate this behaviour the following two conditions are met.
When sending SMS when on 3G ( Not WiFi ) and when I have the switch in messaging set to send as iMessage.

If I uncheck iMessage then the freeze doesn't happen.

Also, if I am on WiFi even with the 'send as iMessage' set, there is no problem.
Any ideas anyone ?

Apple's iMessage service has not been working today due to widespread server issues. Try again in a few hours

Actually this problem has been occurring for about a week or more and today it sometimes happens and sometimes not.
I have disabled 'send by iMessage' yet it still happens but only when AE is enabled.
