I've had my 4S for a couple of weeks now and sometimes when on AT&T 3G with full bars, I will scroll down to reload the timeline on my echofon and facebook apps but they just sit there with the "wheel" spinning blank and not refreshing/loading new tweets/facebook.

I'll close out the apps completely or restart my phone and nothing. It seems to be intermitent and happens with usually full bars.

I'm lost.

I don't know about Echofon but the Facebook app isn't exactly perfect so, in that instance, I wouldn't be surprised if it was the app.

I assume so as well, for the most part. I ask because A) this didn't happen on my 3GS (iOS5 or otherwise) and B) it seems to happen to both FB and echofon at the same time leading me to believe it could be something else.

B) is an interesting one and you may be right there that it's something else however A) leads me to believe that it has to do with the new Facebook update, which hasn't been out for very long.
 
It is happening again, and now Safari is freezing in the same way... ugh...

That sounds annoying. Some things you could try are:
  • Reset Network Settings
  • Reset iPhone
  • Restore iPhone from backup
  • Restore iPhone as new
Not sure what the problem is but one of those could possibly help.
