Upgrading S3 (cellular) to S6 (cellular), so this will be my first go at this process. Anyone have a link to instructions on how to transfer the cellular service from my old watch to the new watch on AT&T?

AT&T experience only please.

Seems like I just unpair the old watch, setup the new watch and then add cellular to the new watch. Is that all there is to it?

As I remember from when I was on AT&T in the S3 to S4 days, when I paired the new watch it asked if I wanted to move the existing cellular service or create new.

Not at all complicated. Unless AT&T's managed to screw something up since then, which is always possible. LOL
 
I've transferred AT&T ever since the first cellular AW (3 to 4 to 5). Easy-peasy. When you pair the new AW, you'll be prompted to either move the current service to the new AW or create a new account.

I was with Att 10+ years and most of the time transfer works, but when it didn’t I lost 2+ hours. They offered me to mail a SIM card, etc.

Thanks God I left Att :)

What if you want to unpair your old watch first so that you can pair the new watch using the backup of the old watch.
 
Thanks! Just to recap:
1. Backup old watch
2. Erase old watch (that should unpair cellular)???
3. Setup new watch and I should be promoted to move cellular plan to new watch.

Does that sum it up?
