iPhone 11 Pro AT&T X -> 11 Pro: AT&T or Unlocked (sim free) version — any difference? Also eSIM

Hi before I order just wanted to confirm if there are any pros or cons to getting the unlocked vs AT&T. In the past the unlocked SIM free would lag considerable so I never considered it as an option. I would buy the phone outright in either case so I believe the phone is unlocked. Are there any optimizations (radios etc) using the AT&T variant on AT&T’s network? Any limitations?

One other think I’d like to move from the SIM card to the eSim so I have a SIM slot available for local data when traveling. Does the AT&T version come with whatever is needed to activate the eSIM or in either case is a call or visit to AT&T needed?
