I’m currently running the tvOS 17 beta on my Apple TV4K and within the last 24 hours, when I play Spatial Audio Dolby Atmos music in Apple Music, although the Atmos logo is displayed, the AirPods section on the new control panel says that my AirPods are playing music in stereo …but with films it does say playing in Dolby Atmos. Only been an issue within last 24 hours, been running beta perfectly fine all week.
