Scenario:
ATV in the bedroom connected to TV via HDMI. One person wants to watch TV while the significant other wants to sleep.

Need:
Set TV volume to zero, pipe audio via BT to a portable speaker - this would be used so other family members don't wake up.
Must be easy to pair and unpair if we want to play audio via HDMI to TV
Bonus - the speaker would have an aux out to connect to headphones

Cost:
Not looking for high quality, this is basically some background noise for my significant other. No deep bass needed etc. Something that won't break the bank.

I think a roku remote control has a headphone jack. Something like this but via BT.
 
Tons of devices for this on Amazon. Found something for about $26 called "Golvery Bluetooth 4.1 Transmitter and Receiver - 2 in 1 Wireless 3.5mm Aux Bluetooth Audio Adapter" among many others.

There's also plenty of little boxes called HDMI Audio Extractor and similar, which will make this split just out of your :apple:TV (forward HDMI signal to TV as is now, but offer other connections to get the audio). I use one of these myself for a zone 2 feature on a receiver (it can only take analog input)- works great!

Are you sure your TV doesn't have a headphones jack out? Maybe just route a cord from there to where you want to watch?

Of course, I realize you are wanting to use BT but that will likely lower the quality of sound and probably result in latency issues vs. a carefully routed (hard) wired solution.

check your TV
many smart TVs have bluetooth, and you can pair the headphones/speaker directly with them.

Yours may not have it, but something that you might not have thought of
