So when I use the iPad at night with auto brightness, I notice it's kinda dim for awhile then it brightens up outta nowhere. So when does it get bright or stay dim? It seems inconsistent especially at night.

do you by chance move from dark rooms to light rooms or lights off then lights on (or vice versa)?
 
In a dark room, especially if your brightness is > 50%, the light sensor will pick up reflected light.

So if your face is 1 foot from the screen, and you hit a mostly white web page, the bright light will trip the sensor. Same thing (in reverse) if you go to a very dark screen.

If you have a few lights on in the room, this "reflection" effect will be minimal.
