Have you understood if the auto detection of bike activity is coming with apple watchOS 8 or is an exclusive of aw7 + awos 8?
or has anyone tried with an old Apple Watch 6 + the update?

I went for a ride today with my series 5 and it works surprisingly well! start / stop detection is within seconds of my Wahoo. This has nothing to do with the hardware in the new watch. Oh, it also announces when it's pausing and resuming, as well as stats every 5 miles and when rings are closed.

Very nice. Thank you very much for this confirmation! This is what I was expecting before trying to buy the aw6 at a lower price

I discovered this today on my series 5, I guess that it has something to do with a) no motion detected while the bike is stationary; b) falling heart rate (?). I noticed it wasn't 100% accurate when it came to stopping, but restarted pretty promptly.
