my 4s running 5.0.1 doesnt do this

i have reinstalled itunes
hard reset phone
reinstalled ios

Have you got iCloud backup turned on? This will stop it automatically backing up.

iCloud backup doesn't have any affect on WiFi sync. Are you on Windows 7 x64? I am and it works so poorly I've stopped trying to use it. Others report the same thing. If it won't sync on demand then I don't expect it to sync automatically.
