Is there a way to set the iphone so it will not autolock when it's in a charger/cradle, but will autolock when not plugged in? I can't figure out how to do it on iPhone without manually going to the settings and changing the timeout from 2 minutes to never.

WM has this functionality and you could even set it so that when it's plugged in it automatically runs slideshows. When I'm at my desk and my treo is in its cradle it will automatically run slideshows of my kids.

Not possible on the iPhone unfortunately. Atleast not yet, it might be added in the future, but I wouldn't get my hopes up.
