I've just started using my iPod to store notes - pretty cool I must say.
To ease the process of storing notes, I put together a 2 step Automator workflow to take the clipboard content and create a text file in the Notes folder on my (docked) iPod.
The first action in the workflow is one I downloaded from Automator World
This takes the clipboard content and passes it to the next action, which is a basic Finder 'New Text File' action. All you do is to select the Notes folder on your iPod as the location and enable the 'Save As' checkbox. I saved the workflow as an application called iPodNote. Your iPod probably has a different name to mine, so posting the application here is not much use.
All I do is copy some text to the clipboard and run iPodNote, it prompts me for a filename, and the job is done.
