So do you guys think that we'll have to wait for the official iOS 8 launch on 9/17 for these (Swype, SwiftKey, etc.), or might the Apple Gods magically bequeath a surprise of availability one of these days?

Apple will be allowing iOS8 specific apps right before iOS8 hits the streets and developers have been working on iOS8 apps, so I'd say some keyboards will be available when iOS8 is released and others will be available shortly.

Just got an update from SwiftKey that their iOS keyboard will launch on September 17th, which is iOS 8 launch day.

So pretty much, that's the answer probably for Swype and the rest of them.

I saw on twitter that Fleksy keyboard submitted it's app. So if Apple pulls a blunder or simply allows these apps to update before the 17th, the developers are certainly ready to make that happen.

Looks like third party keyboards don't have access to native dictation which is disappointing.
