Finder says 82,46 gb available
About this mac says 76,78 gb available

About this mac also says that 5,68 gb is taken under "Backups"

82,46 - 76,78 - 5,68 = 0

My time machine is up to date, so I have no idea that 5,68 gig has to go to.

Can someone tell me what that 5,68 gb is, where it is located and why it's taking disk space while everything is backed up on time machine?

That seems to be "Mobile Backups" doing its thing. Why it is still taking up space on your mobile disk when there exists a recent actual Backup to an external disk, I don't know. Possibly a feature, maybe a bug.

The files are located under /.MobileBackups/

You can enter sudo du -sh /.MobileBackups/ in the Terminal, to calculate the size of that folder.
