Just bought a mid 2010 macbook pro running 10.6.8 and im trying to update to el Capitan, but the only available downloads are for 10.11.6? It doesn't seem to be letting me upload the .6 without the original.1. Any suggestions?

It sounds like you have the 10.11.6 update file. You need the full 10.11.6 installer (a little over 6 GB). Here is an Apple Support link "How to upgrade to OS X El Capitan" that contains a link to download the full 10.11.6 installer .
Look at step 4 "Get El Capitan"
