I currently have the original AW SS and am thinking I would like the Black Stainless which only is available with Cellular.
In Canada the activation is $10 and monthly $5 with Bell which is my current carrier, and my plan would allow for addition. Just don't know yet if I will bother, but if I do get the cellular service can I disable it on the Watch to preserve the battery ?

Why would you get it just to disable it?? (you like giving Bell extra money?) :)
I'm sure there's a toggle (as in the iPhone) to turn your cellular radio off, if you do have it provisioned - as the AW3 only has 1 hour of talk time before draining the battery, there's lots of folks that will want to conserve their battery after making a call or two. (at least until they can get to a charger) :)

If you don't get it provisioned at all, the cellular radio should be off.

I'm thinking lots of AW3 and iPhone 8/X buyers will end up getting a wireless charging pad for their cars. :)
 
Yes in Control Center you'll see a toggle to disable Cellular Data
