So this is the most interesting bit for me, I use reminders on the watch alot with Siri and the pause is often a little annoying as it has to go through the cloud. So in theory on device Siri could be a very nice upgrade in terms of speed.

Has there been any demos so far?

I ordered my Ultra 2 yesterday. Faster processor, double tap and having much of Siri done on watch rather than through the cloud is a winner. My brother will also have a great surprise when I gift him my Ultra 1.

It has irritated me for years at how Siri has such a delay when using it on the watch. It's very useable, but always feels a bit too slow. Actually I find this when it's connected to the phone. If I'm on a wifi network without the phone nearby, or on cellular, Siri is much faster. I wish the watch could just act like an independent device at this point.

Anyway, those two features (Siri and double tap) tempted me to upgrade from my Ultra, but I'm going to wait I think.

I am staying well away from upgrading. Same battery life and a chip upgrade to enable double tapping, which I personally couldn't care less about.
 
Already pre-ordered, on device Siri is about time, this is the most annoying issue I have with the current ultra. When you have a good signal it's very fast and responsive, but so many times I may be in a commercial building or even a different room of my house so that the watch can't connect to the iPhone and it doesn't connect the the Wi-Fi/cellular fast enough causing Siri to be 100% useless.
